CHICKEN SOUP



  • 1 good sized chicken with skin and fat removed

  • 2 bunches of fresh dill, washed

  • 1 bunch of fresh parsley, washed

  • 1 small peeled onion whole (stab it a bit)

  • Couple of handfuls of wild rice

  • 2 or more carrots cut up small

  • Handful of split peas and/or a handful of lentils and/or a handful of similar things....

  • A clove or two of garlic chopped up

  • Some pepper (a pinch of salt -- your guests can salt to taste after the dish is served)

  • Anything else that you wish

  • 4 to 6 cups of cold water (to cover the ingredients)

  • Cover and cook for 1 1/2 to 2 hours, then remove most of the dill, parsley, and the onion, and take out the chicken. Skim any of the fat that is on the surface.

  • Serve in a bowl with the shredded chicken added and eat (with rice or kasha or...?)
